(NaturalNews) An estimated 18 million Americans suffer from non-celiac gluten sensitivity, a condition preventing the tolerance of gluten, which is a substance commonly found in cereal grains (particularly wheat) that creates elasticity in dough.

Gluten sensitivity causes symptoms similar to celiac disease, an autoimmune condition that damages the small intestine when gluten is consumed.

Individuals suffering from gluten sensitivity often experience headaches, joint pain, foggy mind and numbness in the legs, arms and fingers, according to Beyond Celiac.

Dangerous Grains: Why Gluten Cereal Grains May Be Hazardous To Your Health, written by James Braly and Ron Hoggan, details the sweeping impact gluten sensitivity has on our nation. The following is an excerpt from the text.

"Religious tradition calls it the 'Staff of Life.' Most of us eat it every day. It's even a phrase from a well-known prayer: 'Give us this day our daily bread.'"


Society tells us bread is an important food staple, but is it for everyone?
"But a growing and undeniable body of research ... tells us that our daily bread (more specifically, wheat and related cereal grains) may be negatively affecting as many as 90 million Americans and may be a basic cause of illness for up to 10 million.

"How can this be? Haven't we been told, over and over and over again that grains, particularly whole grains, are a fundamental part of a healthy diet and should be eaten every day? Isn't this belief a part of today's 'Gospel of Good Nutrition'?

"It's undeniable that whole grains are good nutrition for some of us. But it's even more fundamental that there is absolutely no food that is good for everyone. Who hasn't heard or read the observation made thousands of years ago: 'One man's meat is another man's poison'?

"It's been known for years that certain whole grains (wheat, rye, barley spelt, triticale, kamut, and possibly oat) are the cause of celiac disease.

"This intestinal-tract disease can vary from mild (gas, bloating, loose stools) to life threatening (malabsorption, weight loss, malnutrition), and is preventable/treatable by completely eliminating all of the aforementioned grains from the diet.

"But isn't celiac disease rare? Less than one in one hundred Americans are diagnosed with this problem. Why should the rest of us worry?"


Cereal grains responsible for causing diseases in some people
"Over the last two to three decades, at an accelerating pace, researchers have demonstrated that the offending proteins in these cereal grains (including gluten, gliadin, and glutenins) can cause symptoms, and sometimes entire diseases, in nearly any area of the body, and not involve the intestinal tract at all.

"These problems are often called 'non-celiac gluten-sensitivity symptoms and diseases,' 'gluten-sensitivity symptoms and diseases,' or simply 'gluten sensitivity.'

"This last term includes, but is not limited to, celiac disease. It also includes problems caused by sensitivity to grain subfraction proteins such as gliadin and glutenins.

"I first became aware of the wide reach of gluten sensitivity in the 1980s when I read Relatively Speaking, a book first published in Australia and republished in the United States as Your Family Tree Connection.

"Written by Dr. Christopher Reading and Ross Meillon, it describes Dr. Reading's detective work in unraveling the causes of 'undiagnosable' symptoms through close examination of family health history.

"When in Australia in the late 1980s, I had occasion to visit Dr. Reading's office in a suburb of Sydney. On one wall was a chart that would be amazing to any health-care practitioner even today: a list of over one hundred individuals who had initially consulted Dr. Reading about what they assumed to be lupus."


Curing 'incurable' diseases
"When they first saw Dr. Reading, all had had symptoms (fever, joint pains, and skin rash are among the most common) and positive blood tests. But since consulting him, everyone on the list had been symptom free with negative blood tests for five years or more.

"That's right: over one hundred people cured of lupus in the 1980s. Even in the United States of 2002, any lupus specialist will tell us that is impossible and will resume writing prescriptions for Prednisone, a dangerous, synthetic version of the natural cortisone molecule.

"How did Dr. Reading do it? His program included complete elimination of all grains from the diet, except rice and corn (it also included elimination of milk and dairy products combined with heavy nutritional supplementation both orally and intravenously)."

Dr. Braly and Mr. Hoggan estimate that 90 million Americans may have non-celiac gluten sensitivity. They write that undiagnosed sensitivity to gluten, gliadin, and other grain proteins is the root cause of many cancers, autoimmune diseases, neurological diseases, chronic pain syndromes, psychiatric and other brain disorders, and premature death.

"There is also a clear causal connection with some cases of osteoporosis, epilepsy, learning disorders, attention deficit disorders, infertility, miscarriage, premature births, chronic liver disease, and short stature."
